Mexican Street Corn

“If you ever want me to do something around the house, just make me this.” -Ryan, husband

INGREDIENTS:

2 Tbsp sugar

1 lb. frozen corn (Or 4 ears fresh, corn OFF the cob)

1/4 c. mayonnaise

1/4 c. sour cream

1/2 tsp sriracha or to taste

kosher salt to taste

Tajin, to taste

1 c. cotija cheese (queso fresco), crumbled

1/4 c. cilantro to taste

chili powder to taste

DIRECTIONS:

  1. Bring 1 c. of water (enough to just cover corn) to a boil and add sugar. Once boiling, add corn and cover with lid. Simmer corn for 3-5 minutes or until corn is tender.

  2. Combine mayonnaise, sour cream, sriracha, kosher salt, and Tajin in a small bowl.

  3. Once corn is done, drain well and return to pan. Allow to cool for about 3 minutes. Add mayo mixture and stir until well combined.

  4. Add 1/3 c. or so cotija cheese to corn and mix. Warm carefully on low if desired.

  5. Serve garnished with more cotija cheese and chili pepper.
