Crispy Chicken Wraps

Quick and simple, these crispy chicken wraps are always a hit. Bonus, if you have left over chicken mixture, it’s great on crackers or as a sammie.

INGREDIENTS:

1/3 cup mayonnaise

2 Tbsp sour cream

1/4 cup fresh cilantro or 1 tsp dried cilantro

2-3 green onions, sliced thinly

2 celery ribs, sliced thinly

2 tsp hot sauce such as Cholula

3 cups rotisserie chicken, shredded or canned chicken

2 cups sharp cheddar cheese, shredded

4 tortillas, fajita size

DIRECTIONS:

  1. Whisk together mayo and sour cream.

  2. Add in cilantro, green onion, celery, hot sauce and chicken. Mix thoroughly.

  3. Sprinkle cheese over tortilla and spread mixture over cheese. Sprinkle additional cheese on top of chicken. Fold tortilla.

  4. Spray tortilla with cooking spray.

  5. In a large skillet on medium heat, cook chicken wrap until golden brown.

  6. Transfer to a plate and cook remaining wraps.

  7. Serve with additional hot sauce, sour cream or other preferred garnish.

  8. Enjoy!

* We have since found we prefer to make these as a ‘quesadilla’ either using two whole tortillas or folding one tortilla in half.
