MA! The Meatloaf!

If you would have told my younger self that I’d be eating meatloaf as an adult, I would have denied it until I was blue in the face. Alas….here we are. As for my son, he won’t touch it. LOL That just means more for Ryan and I!

I have a couple different favor renditions of this and have included them both.

INGREDIENTS:

2 LB Ground Beef

3 Eggs

2 Sleeves of Ritz Crackers, crushed fine

1/4 cup of Milk

1 tsp Onion Powder

1 cup or 4-5oz Shredded Sharp Cheddar Cheese

Ketchup, to add to top

Salt & Pepper to taste

Optional Italian Style:

1 jar Pizza Sauce, we prefer Gino’s 12 oz

1 Tbsp Italian Seasoning

Optional BBQ Style:

1 cup BBQ sauce, we prefer Stubb’s


DIRECTIONS:

  1. Combine all ingredients.

  2. Form into two loafs on a sheet pan.

  3. Bake at 350 deg F for 60 minutes or until internal temp reaches 165 deg F

  4. Add Ketchup when 30 minutes remain.

  5. Optional: Broil at the end for 5 minutes for a toasty top.

  6. Enjoy

We often serve this with a simple slice of buttered bread and green beans.

*We prefer to bake both and freeze one for another easy supper later.
